This vegan chocolate mousse tastes amazing, it’s easy to make and it looks really cute in little coffee cups – that’s why it gets the title ‘perfect’!
Use the best chocolate you can for this one. Vary the flavour by using flavoured chocolate, or adding a couple of drops of peppermint
or orange essence.
1 batch (about a cup) thin soy cream
2 tablespoons maple syrup or agave nectar
½ teaspoon vanilla extract
Melt the chocolate in a glass or ceramic bowl over a pan of gently simmering water. Remove chocolate from the heat and cool a little
until it becomes slightly thicker. While you are waiting for it to melt and then cool, make the soy cream, then whisk the cream in a large bowl until it is full of tiny bubbles. Add melted chocolate little by little to the soy cream, whisking as you go. Then stir in the maple syrup or agave nectar and the vanilla extract.
Spoon the mousse into small cups or glasses, and place in the refrigerator to set.
